Say I have a wordpress blog or blogger blog.

Say I remove all the visual navigation and references to older posts etc so when a person views my site, they cant see any links to any other pages... However if I do this, will Googlebot be able to see all my other pages, or just my homepage? Im assuming it will just see my homepage?

It sounds like some seriously bizarre thing that you are trying to accomplish there: are you sure it's necessary? But to answer you question, there are two chief considerations:
    1. Google finds pages by following links. If no links are pointing to a page, whether from the same site or from elsewhere, it is unfindable.
    2. If any page is unreachable via a progression of links from the home page, it will be considered an "orphaned" page and probably dropped from the Google index.

    I hope this helps!
