Calling SEO Experts! Have I got this right?

I'm a bit of a newbie so sorry if this sounds obvious to you.
I've been doing a serious amount of leaning the last couple of months & I've decided on a few methods of making money online that I would like to work on.
Obviously not all at once!
I'm going to start with affiliate marketing.
The plan is to set up some blogs optimised around some target keywords but I have a problem that's bothering me & I can't seem to find much information about it.
Apparently the location where your website is hosted can have an effect on your ranking but this is something you don't here much about.
Also from most of the keyword research examples I've seen your told to look for the "global monthly searches" & target keywords with 1,500+ searches.
But the problem is, I'm based in the U.K. & the search results for page one of Google differ from country to country.
So I think I should be looking more at the "local monthly searches". Would I be correct in saying this means the search quantity for whichever country you live in?
From all the keyword & SEO tutorial videos I've seen your told to do keyword research, check monthly searches, check competition & almost always recommended Hostager for web hosting but this is not ideal for someone in the U.K.
I may be off with this a little, as I said, I'm a newbie & this is just something that I've been thinking about.
My main question is, as I'm in the U.K should I just concentrate on ranking for page one of Google U.K?
I think it would be really difficult for someone in the U.K to rank on page one of Google U.S.A.
It makes things a bit tricky to get your head around or maybe its just a newbie issue I'll master soon enough.
