New to SEO - A few questions for you all about my ideas

Hello everyone, this is my first post! It's great to be part of this community - there seems to be a ton of energy and excitement here, which is why I have decided to get involved in starting some of my own niche sites. Although I am new to this, I have been reading a ton of books, listening to a ton of podcasts, and watching a lot of video tutorials about SEO to learn as much as I could.

I am currently a partner (15%) in a recently launched online candy business specializing in premium hand decorated and hand boxed chocolates and confections. I have been working with the company for 7 years on the side, and finally got them to expand their business online. I developed the entire website, shopping cart, etc in 2 1/2 weeks - this included taking all of the pictures, writing product descriptions, implementing shipping cart, shipping services, payment gateways etc... This was in addition to my full time job working 40 hours/week.

I had no upfront costs at all for this and the owner and I worked out an agreement where I would receive 15% of all online sales. Since the site went live 3 weeks before christmas, we have done approximately $2,500 in business which resulted in a small amount of money for me so far. Because of the "local" nature of this business, people are finding us online just by searching our business name. Most people have never heard of us, so I wanted to expand upon the power of the internet to drive new customer bases who live outside of our geographic region.

Both myself and the owners are pleased with the results of the website to date, though we both want to expand. With several key holidays on the horizon, I have been hard at work preparing our product lines and articles to use to specifically target several keywords in our candy "niche."

Specifically, I would like to focus on two keyword phrases that are relevant to two of our most popular holiday products. One is a three word phrase, the other is a two word phrase. Attached is the SEO competition analysis from Market Samurai for the three letter phrase.

It seems that for this keyword phrase, the competition are all "RECIPE" sites (you can see from URLS) and that the PR rank and BLP are quite low- however - they do have a lot of IC and BLD activity, which we clearly cannot compete with at this level. My question to you is:

If my site/content is optimized for my keyword and if I use article marketing/social bookmarking/blogging/etc. to drive backlinks to my site how soon (realistically) do you think I can list on google's first page?

We are hoping to rank within 45 days, and have optimized our site with this specific keyword for this campaign and are ready to go forward.

My other question is about a venture I am looking at entering into - a website/community for another type of food. Although I do not plan on selling the specific food, I wanted to create a website devoted to this particular type of food and link to affiliated sites/adsense to generate revenue. I and my family know a lot about this particular topic, and I wanted to generate some possible income from this hobby. My research has led me to a 1 word keyword that seemed to intrigue me - upon inspection of this particular keyword, I noticed that several of the 1st page google rankings had mid-to-low PR, IC, BLP and BLD activity and that I can possibly enter into this niche... Attached is the screenshot with URLs removed.

Thinking long term, would it make sense for me to enter into a content rich niche for this particular food item given the competition? Realistically, I think it may be possible for me to rank #2-3-4 for this niche over time if I pick the right domain name and content for the site. I know this could take several months, and that is fine with me as I begin to develop content and the site layout, but I wanted to know as a beginner if this would be a good place to start?

Also, the tools that I am considering buying this weekend consist of the following to be used for SEO techniques found from the smart passive income website:

Market Samurai - for keyword research
The Best Spinner - article marketing spinning software
I am also considering trying a month of UAW for getting backlinks to my site.

Are there any other tools that I should consider or ones that maybe more effective as I begin this process?
