When to publish site?

I have a wordpress website and i aim to have around 30-40 products listed on it when complete. Should i wait until all 40 articles and the onpage SEO is finished before publishing?

Or would it be best to publish say the first 10 and keep adding as i complete them?

    if you ask me, the sooner the better. 10 first slowly and then let it become routine for you

    I think once i am ready i need to use the google site map generator? If this is correct do i need to use the generator every time i add a new product?
