Variance of Adsense Earnings?

One thing that annoys me! My earnings always stick very close to the average eCPM.

For example, if I have had a very good morning, where the eCPM is much over the average, it's almost certain I will have a poor rest of the day where the eCPM goes back towards the average. The converse is also true.

Anyone else have this?

This is more and more likely to happen as your daily traffic total gets higher and higher. It's the law of averages in effect. I do find that some days of the week (i.e. Friday/Saturday) may have higher average eCPMs or CTRs than others, though the traffic on these days is typically lower.

Consider this a good thing, stability of some sort

Same thing here, and most of the times my ads are doing better with less traffic.

It's possible that its due to pulling of ads (and bids) from rotation once an advertiser's daily budget is reached.

Yea, generally I had experienced higher CPC during Thursday and Friday evening compared to other days/times.
