Any opinions on how much content is enough? and how often should new content be added to sustain a rank 1?

As we run article directory then more content we get then better, I don't think it will ever be enough content for us. But for small site, some of them are doing very well with only a few articles. Obviously if you run a blog you need to update it regularly as you need to keep your readers and subscribers happy.

there is really no set or static number they can say you have enough content or not. you need to look at the entire click chain that occurs when someone does a Google search.

if a person does a search on "honey bees" and they reach your site: Google is going to know how interesting your site was to that person by how long they spent on your site. If they bounce off and spend an hour on the next site: you have failed. Google can easily say that your site was not a good match for the search term "honey bees"

However if your content in relation to the search term attracts a user's interest enough to have them stay on your site for time: then you can say that your content was sufficient.

It is not about quantifiable numbers or measurements of content. It is about connecting users with the content they are seeking. Do that and you will be successful. I know how frustrating it can be when you are trying to figure out how you can make your site rank - but over time the picture will become more clear and you will easily see and accept that you must put up content appropriate to your target keywords.

this is a common struggle for people who are trying to assign quantifiable numbers to determine their progress such as PR and back links. You need to get over that and start looking at quality over quantity and relevance over volume

You should try to fill up your site until your exhaust your niche's keyword list I have an RC related site and I'm not sure I'll ever be able to fill it up. On the other hand some of my smaller niches have maybe 5-10 keywords worth writing anything about so that's all I put on the site.

Either or it doesn't really matter as long as it's decent quality and you're building backlinks.
