It is mandatory to have a contact and privacy policy page if you use adsense.

It protects your behind and it can be automated. Just look online for a privacy policy generator.

The law states you do have to have the privacy link on your site and that includes your email address in it. But you can also have a seperate contact us page if you want.

There is a lot of requirements whether it is by adsense or other providers so its important to have it in place.

Then when you build other sites you can recycle the same privacy page and just change the web url and email address.

In my experience this has nothing to do with adsense, the reason that you should have these pages is for gaining trust from your visitors, additionaly you should have a disclaimer or disclosure page for affiliate links, or anything that you believe your visitors should know.

My point is that you should not have these pages just for adsense instead you should have them no matter what monetization method you use!

You don't need those things IF you're not worried about creating a top quality legal website. Why hide the contact us info and why not protect other people's privacy?
