Why is 'Mr Google' indexing my blog when I haven't invited him?

I started building a site/blog (my first attempt) about 1 month ago and have been writing new posts everyday.
I have my own domain name and hosting and I am using a wordpress theme I found. My plan was to write about 30 to 40 articles spread over about 12 different categories before I start trying to get traffic to the site/blog.
I want the site/blog to have some substance and depth to it before anybody visits because I want people to return based on the fact that there is an abundance of good quality and frequently updated information.
However I typed my domain name into google and there are already about 8 articles/posts that have been indexed without me doing anything.
I have about 30 posts so far that I have written but the posts are not completely finished as I would like to do more seo on them i.e. insert keywords where necessary, insert affiliate links and outbound links to relevant information on a different site and to link my posts together under a title of RELATED POSTS (or something similar).
My questions are: Why would google be indexing my site when I haven't done anything to initiate it? What is the best way to launch a site/blog and how many posts do you think are necessary to make it look like your blog has some sort of substance to it?
