If you are talking about a specific product or set of products, then yes, it is generally quite easy to outrank Amazon.

If you are talking about broad categories, then you can pretty much forget it.

Can be beat in few keywords but your website should be good in those keywords. Means your website should have to have quality and related contents. Increase the link popularity which will help in getting good ranking against these giants...

Is it easy? It depends. You need to look at how well those pages are optimized for that keyword and how many back links the actual pages have. Just like when you analyze the competition when there are affiliate sites dominating the top 10.
