What are the advantages & dis-advantages between the two options (i) Not enabling the geo-targetting (keep it blank/un-ticked) vs. (ii) Selecting unlisted.

Specifying a preferred location in Geo-targeting in Google's webmaster tools will align your website to searches coming from the selected location. Whereas if you leave this feature blank means your website is taking a global competition. For instance, if you select canada, you will probably see your website visible in relevant queries in google.ca search results.

Using unlisted is not specifying your site to rank in any particular regions like co.in, com, com.au. Using .com.au can help you to rank well in Australia.
