Is this considered over optimising for my keywords?

I know a little about seo and have a few adsense and review sites that have been doing well but I just want to ask you guys, to stay on the safe side, about my articles seo.
1. I use wordpress's all in one seo plugin and have only my keyword my header, title, and description. I didn't see anything wrong with it reading other blogs about panda and penguin updates, is this ok?
2. Would it be safer to go with long tailed keywords title names or keywords, with a mix of smaller keywords in my description?
3. If I did use an longtailed keyword could I still rank for shorter keywords within the longtail? example longtail: "Nikon COOLPIX L26 16.1 MP Digital Camera with 5x Zoom NIKKOR Glass Lens and 3-inch LCD (Red)" could I rank for "Nikon coolplix l26 camera" just as easy if it wasn't a longtail?
4. How do you implement your keywords for your blogs in seo?
