So it's been almost a week and I was wondering if this is where all the rankings are gonna stay now or do we have to wait longer?

I think at this point it's where it's gonna stay. If this is true then should I start making changes to my sites or give up on them and start over?

You don't have to wait anymore. You need to take action now.

My sites have rebounded *slightly* but I'm still seeing a little see-sawing. I'd say the smoke hasn't cleared completely yet...but who knows.

The sites that would have recovered, have done so already judging from what we've seen. I agree with Henry, focusing on relevant high PR backlinks should be your main focus now (as it's always been).

It's time to do some work dude, if your website is not recovered yet that means your website is penalized by Google. You need to make some changes in the strategy and need to make some changes in the content or you should think about the redirection of your old website to new one (Final option )
