Help with Keyword Organization

Alright, so I've chosen my keyword: "bird identification"

There are basically limitless posts that can be written about bird identification and there are tons of subcategories under bird identification, such as Sparrows, Ducks, Hawks, ETC, and I'm wondering how I should organize all the posts.

Let's use the category "Ducks" for now.

Options:

1. Have a epic page called "Bird Identification: Ducks" that would more than 10000 words long, and have pictures of every single type of duck and how to identify them. Personally, I think the post would be to long and people would get lost.

2. Divide "Ducks" into dabbling ducks, diving ducks, and whistling ducks, and have a separate page for each group of ducks with each page having descriptions and how to identify each single specie of duck.

3. Have big Bird Identification: Ducks page --> page with Duck groups (option 2) --> 30+ separate pages identifying each separate specie of duck that would be around 100 words each; so 30 pages of 100 words.

Which option do you think I should take? Do you have any other ideas for options to do? I want the organization to best suit the reader and still have posts that rank high in google and get more traffic to my website.
