Which is better for AdSense ads relevancy, subdomains or subdirectories?
I can't find the answer to this simple question. Does Google AdSense serve ads based on page content or overall site content only (in which case subdomains would be better I guess)?

It's an irrelevant question, not a simple one. The answer is it doesn't matter.

Your domain has little to do with anything. Subdomain as well.
The title and url of each page, now that could be a different
story, if you are using canonical urls.

Google serves ads based on the visitors interests, as well as
those adwords users who are targeting your site. After that,
it looks for other clues, as the title, h1, etc.

Why would subdomains be a a better guess? What does a subdomain
have to do with anything, including adsense?

I don't get your reasoning. Makes no sense.

Relevant adsense ads are different for each person. If you
want to try and tweak the ads, pay close attention to
the title and h1. But google is betting the farm on personalizing
    the web.
