Avoid directory structure URL. It is better to have short URL which will be easier for user's to remember and also will convey what the page is about to users. In my opinion Exmaple.com/products is good.

No offense but nobody would ever remember the URLs in your forum sig., your using hyphens & underscores (confusing for traffic to remember):

      Example:
      hxxp://yellowpages.sulekha.com/samsung-service-center_chennai_contacts
Better practice is to pick one or the other (hyphen or underscore) not both.

Its always beter to have the URL like example.com/products because it is more SEO friendly than example.com/category/products.

For a new site I would keep it short. I would just use example.com/products. As your site expands you can develop categories and longer tail URLs

That would require a lot of 301 redirects for no reason.

Setting up the site structure should happen on day one, otherwise you'll end up doing a lot of extra work later on & possibly end up with 404s If you go changing site structure after the site is established.

Agreed. If you make changes later, you can confuse visitors and screw up your rankings unless you keep perfect track of your URLs and make 0 mistakes when entering your redirects. Planning from the start makes growing the site much easier (think scalability).

domain.com/category/page is good for search and human users. When you look at visitor stats for a specific product page, it will be rare that a user manually types in the URL anyway (in my experience). It's more likely they will get there via search engine, shared link on social media, internal site search, by browsing your site, or if you're fortunate, a bookmark.

If you are concerned about keeping visitors aware of where they are while they are on your site, especially with long URLs, also consider using breadcrumb links if many of your pages will be 3-4 directories deep (e.g. site.com/category/subcategory/product).

If the site is going to be large I would definitely use the category format. If its a small site you could just do domain.com/pages.htm
