Why is Google is Unindexing all my pages and posts.

It is a Wordpress site. I used to have about 600 posts and about 25 pages indexed and even ranked fairly high. Now Google has removed almost everything.
As you can see by entering in "site:mysite.com" into google, even my homepage isn't indexed.
All that remains indexed are old deep content that they probably haven't got to crawling recently. Once they do, those will be removed as well.
What do I suspect I've done wrong?
- Changed themes, but I've tried a few different ones with same issue
- Had custom permalinks, but removed them just in case
- My 301 redirects look fine, but I have a lot, maybe something is wrong with how I set them up
Before you ask, I've already done the following:
- Generated, Submitted latest Sitemap
- Asked for Reconsideration request, passed that
- Set up any 301 Redirects needed
- Submitted Change of Address for any old domains where content was moved to my current domain
