Howdy,

Can someone with Adwords Knowledge confirm if Google Conversion Tracking - https://support.google.com/adwords/answer/1722022?hl=en

Tracks conversions not just at keyword level but also at placement level.

So i can see which sites/placements i'm bidding on the display network are converting?

Also i know that google conversion tracking doesn't traffic organic conversions - https://support.google.com/adwords/answer/2375435?hl=en

Does anyone know what i can use to track organic conversions - is it goals?

    Yes, there is a conversion column in your placements report (under the Display Network tab).

    You can use Google Analytics goals to track organic conversions with goals, yes.     Of-course adwords tracks conversion at placement level. How else would advertisers see which placement are converting well, and block the non-converting ones.
