Does anybody else think YouTube Partner program earnings are getting harder-N-harder to understand?

I thought I had the YouTube Partner program and Adsense figured out... Boy was I wrong...
I have a niche specific youtube channel with a bunch of loyal followers that gets about 2500-3000 views per day.
Here's my issues:
1. My estimated earnings are all over the place. I seem to get right around the same amount of clicks every day (100 clicks per day) however my earning are all over the place ranging from $2.50 - $10.00. What is the deal, I know random advertisers get thrown into the mix but what can't they make is simple to where I get around the same for each click everyday. Totally inconsistend.. How do I make this more profitable?
2. I notice that other people in my niche get all kinds of niche related ads... I don't. I'm in the musical instrument niche and i'm getting "hp laptop" and "dell" ads when I watch my videos. Why can't I "zone in" on A. The ads that pay more, B. The ads that target my niche and C. Both ads that target my niche and pay more.
3. With adsense and the partner program, it seems stuff changes frequently (layouts, rules, terms, etc.) I've tried to figure it out using google support but very limited information or not presented very clear. How can I understand how it all works a bit better?
Is there anything else I can do to be more profitable or better at this? I really want to understand this and figure out how I can eliminate lost profits.
I would totally appreciate any advice or direction with this, it's driving me to my wits ends!...
