SEO and WooCommerce question?

Hi I was just wondering what is the best way here to SEO an ecommerce site. Instead of Posts and Pages it's mostly Products and Product Categories. For example I am using Yoast SEO and I am not sure if I should SEO the individual products or just the categories?
In WooCommerce the Product Category is the page with all the products on it, so would it not make more sense to bring someone from the search engine to this page rather than an individual products themselves?
However with Yoast, while there are many options to SEO a wordpress page, it seems there are less for a Product Category, even though a page and category and essentially the same.
Could really do with a small bit of help on this.
