Keyword Research Questions (Newb)

Okay so I've done some searches on WF and google and it's cleared up some of my questions. Here's what I still don't know:

1) Why does google keyword planner contradict google search? Ex: [how to make chocolate chip cookies] in google keyword planner shows 18 100 exact searches with 'low' competition. Yet typing "how to make chocolate chip cookies" into google search reveals 1 510 000 results of exact competition. Why does the keyword planner say the competition is 'low' if there are already 1.5mil exact competitors?

2) Is profitability directly correlated to exact monthly searches vs how much competition google already displays? How difficult is SEO/profit return when the amount of exact competitors outweighs the amount of exact monthly searches?

3) Should I only be looking for keywords in which the exact monthly searches is more than the competition on google?

    The exact searches from Google planner have little to do with competition. The amount of results in Google have little to do with competition as well.
    Everything depends on your competition. If you were to rank for "make money online", and image that there were +100mil results, but not a single higher competition.

    Don't go by the big number you see on the google search page. There will be times where there are duplicate versions of a page that will be counted. The google planner can tell you how many unique competitor sites there are that you have to compete with. I use market samurai to get a detailed count of everything.
