A month or two ago I watched a video of Matt Cutts talking at some workshop, and he mentioned just this very thing. I wish I'd paid more attention to the details, but I do remember him saying that once you clean up the site and plug the security hole, you need to submit your site to Google with an explanation and a request to reinstate (or some language to that effect).
