How do you manage many different small niche websites? Is there a simple CMS that could manage multiple niche sites on different domains, from one admin panel? Sites are very simple and don't need the functionality of for instance wordpress.

You could use a CMS like Big Medium to do this. It's set up like a membership site, so you can assign logins and permissions to multiple users. All domains must be on the same server.

I've used this and I like it. Well worth the money.

Thanks Talkreal. Just one question - as I understand it generates HTML pages for the sites? So if I wanted to sell one of the sites I could just copy all the files and that would be it?

Not as easy to extract the files as with traditional html sites, but if you're pretty knowledgeable you should be able to do it. It's a CMS, so you trade off ease of use for control. The code it generates is clean and compliant. The designs are themes- it comes with several built in, but you can also learn to design your own.

You can always ask Josh, the developer, on the forum. He also has a lengthy free trial so you can try it out and see if it's what you need.

I suggest you go with WP and find a simple theme that can be easily customized according to the purpose of the site.

Find a cms you like that lets you organize your niches properly. Then just pull niche data for each domain. I'd think theres a cms out there that does this but if not you could also write a script that displays niches data on each domain from one centralized database.
