What are some under served or undetected niches in SEO writing?

Following up on my last question about the keywords repetition on my copywriting job. I did some research on how keywords work in SEO writing. Now I got the basic understanding of how to do keyword research. There are some free tools and paid tools online. But If there is a way to figure out some underserved niches in SEO writing I guess it will be easier to rank for them and it might lead to generate more organic traffic to my articles?
Or maybe I am completely wrong because niches which are underserved does not even attract much attention.

    Underserved niches would have relatively high search volume and very low or no competition.

    Long tail keywords used to be good, they are very specific.

    But if the niche is with no demand it has no users who want to read or pay.

    What I did couple of years ago: i started a daily vlog with webcam and created a small demand for myself and it's always growing. I don't do marketing. I grow organically, but now got banned on youtube.

    The upper guy told no competition, if people aren't competing for a keyword or smth you want to do, then it's not worth doing at all. You want high competition and if you get atleast 0.0...1% of the market you good.

    Because if there is no competition, this means people don't search for that niche.

    If the niche is underserved, you could get all 100% of it, but the question is would you earn money from it and are users wanting to buy in that niche, maybe they're there just for the joke or some into.
