Incorrect page meta displaying and very low page ranking for explicit search

I have built several WordPress websites in the past and am very familiar with getting a site up and running.
I use Word press, Avada Theme and Yoast SEO. Sites are always well configured for effective SEO performance.

Normally, once I've finished doing all the config and submitting on Google & Bing Webmasters they always appear on the first page of
Google when I search on the URL name > mainly because it's a very specific search. (Getting it to appear for a specific, unrelated keyword is far more challenging and takes a lot longer).

I've performed a Google site search (site which confirms the website page(s) have been indexed.

When I search on "the shoes hop" the first page to appear is on page 2 but it's the Shop and News pages not the homepage.
When I search on "theshoeshop.com.au" all pages are displayed on the first page but many have incorrect meta title and all incorrect meta descriptions
When I search on "the shoe shop" it appears on page 4, and the listing is not displaying the correct meta title and description etc.

The two main differences from previous sites are my latest site is 'https' and also e-commerce (Woo Commerce).

I've been working on this for days without making any real headway. Does anyone have an idea what could be causing this?
