Finding niches for e-commerce

This is probably a question a lot of individuals ask on this section of the forum but I've had a decent amount of experience in the e-commerce realm. I've successfully launched multiple sites in the past that did well for a few months to a year before the product I was selling basically went through its cycle. I spent the past year mastering how to build a store using WooCommerce in under a couple of days. But I'm wondering how do people find what e-commerce niches to target because recently I've been running into a bit of trouble finding one that's not over saturated.
The niches I've worked on in the past year are very competitive, high paid advertising costs and not much conversions into sales. So I'm wondering, how do the more experienced guys find the right niches to target for e-commerce?
