What's the best way to revive an old list of 10k subs?

All subscribers were opt-in, the niche was a thirsty niche so I'm confident the people will still be interested, but the site is now defunct. I was thinking of uploading a couple thousand to Mailchimp and simply picking up where I left off to see how they respond but I'm concerned I will lose a lot of subscribers.

Any advice would be great!

Yes, you have already lost the majority of your subscribers... Mainly because they have long forgotten why they opted in to your list and they forgot about you.
Although the worst you can do is not try to re engage them.
I suggest you pick up where you left off by sending some story based emails without offering anything to sell yet.
If this list was a super engaged one before, pay attention to your open rates, unsubscribes and spam complaints the following weeks and compare, since many people will unsubscribe and hit the spam button.
You can send them another bribe to opt-in again to your list to make sure who are the ones still into the niche.
The sad truth is that the list won't be the same as before, and maybe it had gone completely dead, but still worth the try.

Could you re-establish the website? Does someone
else own it now or did it all just expire? The first thing
I would do is try to get that site back up and running.
If that is not possible, I would setup something very
    similar.

I once wrote something like this for someone...

In her case, I started with a Thank you email, explained I had not been a "good friend" for not contacting them in a long time, gave them an offer to click a link to unsubscribe then added a quick "But" and told them about a VALUABLE email I was sending the next day.

You could try something like that. Think of it as a welcome sequence except that the first email would be a "Thank you for staying with us" kind of email.

If you can't recover your site then at least you should try to keep your audience especially if you feel that people still can be interested. moshmosh described a really kind strategy to do it. Then you can pick a good offer, simply promote it and see how effective it will be

Moshmosh has shared a good strategy what I would like to add to that is please use automation to segment people that opened that email vs the one that haven't, if they haven't opened that win back the email you should wait for a couple of days to follow up with last email and if they don't even open that one consider them a useless lead and remove them from your list.

Make a video of yourself thanking them for sticking around and then explain the direction you're heading in. Makes it personable and they will be less likely to unsubscribe. Maybe give them some free how-to videos as well for extra value.

I went through a similar situation with my list recently. They hadn't gotten an update in 3 years. In my opinion, it's best to address it up front with some humor + stories, like many others have said here. My subject line was "Back from the dead?!?!" Then I went into a story of what's been going on, why I hadn't emailed, and peppered in jokes about knowing they want to unsubscribe...but don't!

Main thing is to provide value. Besides just being funny, assure them that you're still going to provide a ton of value in your emails. No matter what, you're going to get unsubscribes, but reactivating it is better than not doing anything at all.
