the modern web design (style) = better conversion?

I have been in and out of the web marketing business since 2005 and popular designs/styles for a website seem to have significantly changed.

Last couple of years, I see a lot of website using a one column structure and a large header image and the homepage is segmented into some blocks (with 2-3 sub-blocks for each sometimes) with different information and you see all of them as you scroll down. I hope you know what I'm trying to describe here. I'm talking about a website like this

I know it makes sense for mobile users (smartphones, tablets) but you could still use a 2 column structure and change it to one column with a "responsive" WP theme. But it seems like (at least to me) even for the PCs (for non mobiles) the one column style is most popular now.

Is it just because the style is popular now, or does it really(statistically) get better overall conversion even from PC users?

Also, that big header image...I was taught a long time ago the header image shouldn't be that big because the visitors can't see the headline below the header image "above the fold." Has this changed??
