How to help my client and charge fairly?

My client has a great dental practice. Great reviews on Yelp, some growing social media presence and a great product, ie: great technology for dental care and special licenses which many other dentists in his field do not have.

What he is looking for is someone that can help bring more people into the dental office and expanding his business. That is the main goal and I think the process will involve lots of lead generation work, some graphic design, copy writing, development work.

When I mentioned talking about price/rates, he told me to think about what is fair and to present him with options. What I have no idea about is paperwork/where to get contracts type of paperwork? In the past I used to just invoice and that was it.
He trusted me with all his account passwords right after our second meeting. I have not charged any money for the two meetings we had so far, as they were strategy discussions not web design or development work produced.

I have been for the past few years working with recruiters, this time it is me directly working with the founder, ie: the Dentist.

Any advice on:
- How to approach the pricing structure and paperwork?
- Any advice really on how to approach?
- Is there a system out there I can utilize that has worked for you and you recommend?
- What is a good app for invoicing, and a good resource for creating contract agreements that are simple? (I'm only going to work for him Saturdays and Sundays)

    How good are you at doing all of this? How much is the lifetime value of his customer? What are your competitors charging for similar service? Are you redoing his entire brand? What's his current revenue? Is he looking to grow to a point where he needs to hire people or does he just want to add a few more clients?

    But more importantly, what's fair?

    An agency in town that gave a $12,000 quote to my client and I grabbed the project for $6,000.

    Was their price unfair? Nope. They have a huge overhead to cover compared to me so a client would pay a premium to work with them. But it's still a fair price

    As a business owner, they'll pay you as much as you ask as long as they're still making money in the end.
