A few keyword questions

I'm starting to put together my content for a new site and I'm trying to figure out my keywords. I have the ones that I want to target and I'm going to do a page for each but how do you deal with variations?

For example, some words are often searched both as a single word sunshine and two words sun shine. Also, how do you deal with singular and plural? Do you target book or books?

Do you use all of the variations throughout your content or do you just pick one? This is, of course, assuming that the search numbers are similar for the pairs of words.

Thanks in advance!

Include both within your page. ie - Sunshine and sunshine. When building your content for each page make sure you include related keywords. Build a theme and then structure it. If you have sub-sections then use H tags. Include your variations in them. Don't go overboard but make sure your main keyword is in your url, title tag (preferably at the start), and near to the top of your content.

Ideally, hyperlink to your related pages from within your content (incontextual links) and if you have more than one link pointing to the same page, ie - image links etc then apply the nofollow tag so you aren't bleeding too much page rank.

Basically, once your sites pages are indexed, make different changes to each page, note them down and monitor any changes in rankings after a couple of weeks. If you have noticed a big jump with any of them, look back at what you changed and appy them to some of your other pages... then monitor. Making tweaks to your site to maximise traffic is well worth doing.
