It is quite simple. Supply and demand. Don't ask people what they want as a prize. Do the research and find out what products are in high demand, but low supply.

iPhone4... right now there is about a 2-3 week wait on getting those. That might be something to consider.

That is just an example, as I am certain there are other high demand products you could offer. Simply approach it in a way that affiliates would be willing to fight tooth and nail to acquire the prize.
