Percentages of Opt-in conversions?

Ok, I have a list of 2,000 plus in a niche. I give them great Free info 3-4 times a week. I believe in giving great content first and build trust, before drip-feeding offers that I believe in. I have decent "open" rates, but was wondering what the conversions should be for my offers? I have not tried to monetize this list yet as the list grew astronomically within the last three weeks due to a video campaign.

Out of 2,000 emails, how many of those should be opened on average and how many buy typically? Does anyone go off of that or is it a percentage of opens?

I'm not sure what is typical, in this particular niche I am averaging a 34% open rate, which I am thrilled with, but I don't know if that is actually low or if that is amazing.

For example a 2% buy rate of a 2,000 email list is 40 people who bought. Is that typical or is that high/low? Or would you go off of a 2,000 email list that 34% opened. So now there is a 680 email list that was opened and at a 2% buy rate is 14 people bought?

Is the 2% buy rate too high/low for Clickbank, Amazon, etc.? I know they all have different conversion rates. I mainly used Clickbank in the past but haven't done any affiliate sales in a long time, so that's the one I'm most concerned about.

I'm just trying to figure out my conversions and see if I will be getting good returns and where I can improve for this niche. As well as build a spreadsheet as to what is average as far as "opens", buy rates, etc. for quick reference when analyzing one of my offers.
