How to Track "Online Conversions" for Offline Businesses?

What's the best ways you know to track online conversions for offline businesses?

I'm asking in the context of someone sees the company's website. They then go in store to order food, get a hair cut, see the dentist.

The best idea I've had for this is to offer a discount on the website then telling the person he or she will get this discount if they mention he or she saw the site.

    A discount code always works well, a printable voucher - lots of restaurants use them. I've also used online phone numbers before that are redirected to the businesses main line. So the number is on the website, or particular promotion, the customer rings and you can then see how many times it was rung. If you do this for a client you can then show them the ROI if you have their average conversion via phone.
