    Hi

If you have the possibility always try to grab the main keywords of your niche, in your case you should go for it without hesitation, espcially if the exact phrase match has research (check using google adwords tools).

Domain age is important in a certain extent, but if you have solid content and good back links, you can outrank your competition in the long term, even they have been in niche longer than you, google is always looking for fresh content.

Six month ago I bought a two word expired domain (exact match), I just setup a page saying coming soon and did basic seo (title and description), to my surprise I start receiving some traffic from google and bing and I was not even listed of the first pages, so with a good work I'm sure I can show of the first pages in few months.

    Regards,
    Michel

DA is pretty darn important, but if you can appear more relevant in Google's eyes, I believe that you can trump them.

From my experience, domain name is a factor. Only one factor, I have beaten DA 9, 8, 7. With relevant unique content.

Look at backlinks, the actual content on the page for that exact phrase etc.

In my experience Domain age is a big factor. Those domains have a lot of trust in google's eyes but you don't have to take my word for it.

Example: If my keyword was "blue shoes". I would take a 8 year old shoesarethebest.com domain over a brand new blueshoes.com domain

I would just create a shoesarethebest.com/blue-shoes page and blueshoes.com can enjoy being #2. This is something I have already tested but I'm no guru. lol
