Is it better to have one website that you use to promote several related niches and use cross-selling or is it better to have a site for each niche even though they're related?

My view is that it's better to have one website per niche. Not per product. And not to combine two niches on one website (hopeless for list-building).

I appreciate that for Amazon marketers and some others targeting specific, named products, with a domain-name to match, this may not apply, of course. But apart from that consideration, to be honest, I find it quite surprising that people can apparently not want this set-up.

I can see how people operating on a small budget might want to try, and combine them. Your right though, I'd recommend one website per niche.

Actually, there's a saying... selling one product to one person at one time... and bet you know what I mean... although there are some site that sell several products in one site but seriously focusing is still important by far... so sell one niche in one site
