What wordpress plugin or theme can do this?

I am building authority sites and i am not happy with the current way how categories/site navigation is displayed.

Using the normal plugins and widgets, it shows ALL categories of the blog on the side, always.

What i want:

Say i have a weight loss site with different sub-categories. One could be weight loss tips, the other "weight loss recipes" etc..etc...

I want the categories displayed displayed dynamically, depending in what area of the site a visitor is at a given moment.

If the visitor clicks on "weight loss recipes", the categories/navigation expand and show more sub categories, like "low fat recipes", "weight watchers recipes" etc.

This is pretty basic. I just want to get away from the side bar showing everything always right away and add more intelligent navigation and categories display to my sites.

I'd say a custom solution with:

Custom pages
Custom sidebar code

This way you can write about recipes in custom page A (with sidebar custom code to bring ONLY category X).

Hope it makes sense George. I know it's not a easy solution, but using plugins can be a mess if/when one of them gets errors from WP updates.

Now the question is: how big is the site? Cause if it's an old and big site you'll have a lot of trouble updating all the pages individually...
