Just the same, after they have purchased, redirect people to a simple web form then get them to send you any details of the job/service they bought and have a management system such as aweber store all the information,

    Hope this helps,

Exactly what I was going to say...

I am on the list of more than one service provider...

You can even build a list with a squeeze page giving away a report that talks about why people should use a service like the one you are offering.

Is it easy to make the page secure so that only people who have purchased the service can send me an email?

I'm not sure what page your referring to? But if you using something like Digital Access Pass or wishlist I believe you can integrate some kind of registration.

What I mean is, I want to stop just anyone
finding out the url and pretending they have ordered.

Similarily I don't want to people to have to enter some
sort of conformation saying they have ordered.

I just want them to be directed to a page which is only
available to those who have ordered.

Depending on your service offer monthly/ weekly newsletter with an incentive to subscribe to, bam list to market to.

Incentives could be discounts on your services give-a ways whatever you think would entice you to put your details in.

I would definitely make sure you have an incentive for people to sign up, such as discounted orders and special offers that you send out to your list from time to time.

About making sure that random people can't just subscibe if they haven't bought, the easiest thing is to use a shopping cart like eJunkie ($5 per month) and use their feature to automatically opt them in to your buyers list after they've bought (integrating with Aweber or other popular email list services).

However, in the past I did this in the most basic way. After they'd bought, I'd manually add them to my Aweber list through the control panel. This is compeltely allowed, as it still gives them the option whether they want to opt in or not, and I got a lot of opt ins as long as I did it quickly after they'd ordered so it was fresh in their mind. And I made sure that the email asking them to opt in included the many benefits of doing so.
