Scared of using white text

Im concerned about using white text in my header/newsflash because i know how google looks out for attempts at people trying to cram keywords and hidden text. My banner image is red which the white text will be going over. Is this safe to do? obviusly the editor im using has a white background

I don't think that Google would see this as a keyword spamming attempt, your text isn't hidden - it's white with a red background.

if your background is graphic, Google will not understand
this as a colour at all, simply an image.

I expect you will be OK though. You could always put your
header in a box or table cell, with a contrasting background
colour that will be hidden by your graphic.

It would be okay unless actually having people read it is the goal...
The same goes for the light cream and white combination... who do
you think is going to strain to read that?

Are you more concerned with aesthetics or sales?

the white would actually be over a read header but the header is an image, the cream colour is the body. when i hover over a link in white text it turns red making it hard to see against the header

The point is... it's just your header. Is your text just a list of keywords? Or is it just a title with a keyword in it?

Google isn't going to pay any attention to 1 keyword phrase in white text. It looks for bunches of keywords in white text on white background.

Put it out of your mind. This is not an issue for you.

If you ARE worried, why don't you just open your image in an editor and add the white text, then save it as an image? That way, it's just an image.Of course that isn't going to work if it's a running news flash, but the same rule applies regarding how many keywords you're using in the white text.
