It depends on what kind of flash player you're using. Some players have a built-in option to use a frame from the video, or to use a JPG. On my blog I actually use an IFRAME, with a static JPG linked to the actual video.

You could either use Eric's recommendation of using a static JPG or you could configure the default frame if you're using Camtasia to produce the video clip.

look at the code on my site indoorrider.com I am using the free JWplayer.

here is the video post on my blog, having issues with it as well as I have resized the video to fit 16:9 and the text now is showing up on the video player screen...it didn't shift.

Not sure what type of video player for flash this is, I'm using Viper's video quicktags plugin Viper007Bond.com My WordPress Plugins Viper's Video Quicktags

Is there anything better out there that wouldn't cause these problems with the text or am I just missing something?
