It doesn't hurt to have some static content, so long as there is also some dynamic content. If it were up to me, I would include the most recent 10 or so posts in addition to some well-SEO-ed content.

Who told you that most "professional" sites are set up with all of their content in pages, and not using posts?

I think you're misunderstanding the uses of both. Both have a purpose, and in some circumstances one is better than the other...but usually just for organization and personal preference purposes.

You don't have to pick between the two, and with just a little bit of work you can make either act just about anyway you want...

So what exactly do you want to do that you aren't able to accomplish using posts?

As far as the homepage goes, I usually like to have an offer of some sort on the homepage, and include some recent posts...something like:

I'd leave them on the same page for now to get the most out of them. Most users that arrive on your home page aren't going to take the time to click to other pages to read posts they may or may not be interested in. They're much more likely to scroll down and after reading a few lines of a post that seems sort of interesting, hopefully they'll stick around and read the rest of it.

Simply do whatever you need to to provide the most emphasis on whatever is important. Think thats all it really comes down to.

If you have posts on your hompepage then I would recommend only showing a summery. You don't want a complete article being picked up and indexed on your homepage.
