A good start would be figuring out whether those 60K searches are "broad match" or "phrase match". If they're broad match, it doesn't mean much.

Secondly how are you planning on marketing it? If you're planning on ppc to a sales page to suck in some of that traffic, that's not going to work anymore. Google flagged landing pages from ppc. You'd have to build a content rich site based around your keywords.

Yeah mate, your plan sounds pretty loose, consider what you're getting involve in.

    Basically, the formula will be:

(Number of visitors x Conversion rate x Earnings per sale) - (Refunds).

So, if you get 10K monthly visitors and your conversion is 0.5%, and if the refund rate is 20% you will earn:

    10,000 x 0.5% x 32 = $1,600 - $320 (refunds) = $1,280 per month.

You will then need to deduct any expenses you made for the site including Domain + Hosting + Content + SEO + PPC, etc. to calculate your revenue (which is what really matters).

And of course, there is no way we can tell how the actual numbers will turn out to be.

A word of warning though, weight loss is a very competitive niche and if you are just starting out, it will be next to impossible to rank for a 60,000 KW.

That's a bit incomplete. They need to consider the overall profit per customer for a period of time that they set (60 days, 90 days, whatever). You can't just disregard the back end. What if the OP faces a situation where the front end is a loss, but the back end would be insanely profitable. They never tested to see if the previous would happen so they left a ton of money abandoning a niche that seemed like a loss.

That's absolutely right mate I was just giving a very rough estimate; of course he can also make a lot of additional income from an opt-in list, additional offers, etc.

I know it's a bit premature to make this assumption. But, I reckon you will struggle to make anything within the next 60 days judging by what your plans and goals are.

60k exact match for weight loss product = a hell of a lot of work and you don't even seem to have a clue what you're on about. I suggest you forget about SEO and focus on using that cash to drive targeted visitors to a landing page to collect leads. But, you will have to work on your dynamic copywriting skills first.
