Redirects and domains - this is probably really simple but I'm lost!

Yes, you will need hosting for that new domain for the blog but it can probably go on your existing hosting account (depends on your hosting account).

Once you have that, you can do the redirect in cpanel on the account where the blog currently lives e.g. domain.com/cpanel - this video (not mine) explains the steps:

If you are setting up the blog on another domain, you wouldn’t need a redirect unless you want to redirect the old URL (www.example.com/blog) to the new blog location. You would essentially be setting up another website under a different domain.

Although it wouldn’t be a huge deal, you may have a better experience by keeping the blog under your main domain if your goal is to drive traffic there. Websites with blogs attached drive significantly more traffic than those with blogs on a completely different domain.

Have you considered moving the blog to a sub-domain? For instance blog.example.com. This would keep the blog relatively close to the website. Most hosting accounts allow you to add a sub-domain.
