What is a really easy podcasting platform that will let me upload 30-60 minute mp3's and go?

I would look into getting them up on iTunes. It isn't necessarily the easy option you are looking to start with, but it is actually a great place to get traffic if you optimize your podcast well.

I have been researching podcasting for a while now - and plan to record my first podcasts sometime in September.

Libsyn is like hosting, but for podcasts, check it out: Libsyn - Podcast Hosting Services

And yes, 100% you need your podcast on iTunes.

I'd suggest checking out Spreaker.com. It's a no-muss no-fuss way to record a podcast, getting it up on iTunes, and simply pasting the code of the player into a blog post.

Wendy, I checked it out but I don't see a way to upload an audio. It is meant for live podcasting.
