How to measure Conversion % from email list?

I've heard people say my list converts at 11% consistently or something like that....From follow ups...

How do they measure it? Below I written down how I think, is this correct:

For 30 days:
# of people bought directly from email marketing / # of leads added that month?

Does it matter that these people who converted are not necessarily from this month?

    You use tracking tools. The one i use now.. a bit expensive but i also use it for my solo ad biz.. Quick Quality Control. Or you could you Adtrackz Gold.. it depends.. But you need to track to see what converts better and what not.. so you know how to tweak it and make even more money and sales from the same work.

    Perhaps 30 days is too little of time frame?.....But using your measuring, you only account for 1 email...What if I have a ton of follow up emails in place...So each subscriber gets emails throughout the year....And every lead converts at a different point...a percentage of the folks convert after 2 emails and some convert after 6 months and even 1 year....

    Should I measure it for 1 year period instead and make assumption that if every month about 8% convert, then it doesn't matter when they opted in..
