Which niche would be better for me?

hmm..that's a tough one. But I'd say to put more focus on the one similar to SeniorFriendFinder. My thoughts are that if someone is that old and looking for a g/f or b/f then s/he is pretty desperate. Therefore more sales (if they have to pay for the service) for you.

- 1 is for mature people to date, similar to SeniorFriendFinder.com

because it very hard to find old boy or girl..
it very potential..

but the second website also has potential..
but the bigger potential is the first one...

Hmm...You might want to consider methods to test the competition rather than automatically go for the domain that has the greater potential.

If you can't beat out your competitors then all the potential in the world won't matter...

Just a thought.

Mature people have a better chance of successfully finding a partner than inexperienced people. This will result in better conversions on your website, i.e. more money.
