Odd behavior of my website regarding google ranking.

I'm happy to have found a dedicated community that may be able to help me with my questions regarding the website I created.

My web site is very young (it was indexed about two weeks ago) and was created through the WIX editor, and although I think I am (at least partially) aware of the limitation that may and will come from this, I would like to take the chance and understand a number of issues I have encountered, as well as how to prevent other, similar ones from arising in the future.

The biggest gripe for me has been the behaviour of the site's homepage on Google: after the first 'forced' indexing through the Google Search Console, in a matter of hours it already appeared at page 7 and then 4-5 for the keyword pair 'movimento naturale' when searched by people that had a 'clean' search history, as in never visited the site. Unfortunately, after about 5-6 days the homepage (which was the one showing up first for most of the 'generic' searches related to(aimed at the site) disappeared from the Google index: not only no one could find it anymore with any of the searches that worked previously, but when verifying its indexing status (with the url site:*name of the homepage*) nothing showed up anymore. Since then I have re-indexed the page through the Search Console, but hasn't been ranking anywhere near where it did previously for any non-extremely-specific search.

My questions are as follows:
what could have been the potential cause(s) for the sudden, apparently unwarranted removal of our homepage from Google's index? And what could be done in the future to prevent something similar from happening again?
I have been fiddling with the Search Console in the past few days, and there are a number of oddities I would be curious to clarify and potentially 'amend'. First and foremost, when I look at the 'internal links' section, I see that the homepage doesn't ever appear as a source for other pages, despite it having at least three very explicit connections to other pages of our site. At the same time, our 'contact' page appears to be linked to way more times than it actually is, even from pages that have no direct links at all to any other page or content. Secondly, when I look at the list of keywords for our contents as shown in our site, Google tells me that 'movimento' is one of the of the most relevant words, but 'naturale' (that is ALWAYS coupled with 'movimento' every time it appears on the site) is nowhere to be seen in the list. Why is it? This is a hugely relevant matter as I know for certain that 'movimento naturale' would be the most searched for key phrase when looking for our content online
We recently discovered a site who has been apparently copying the text from thousands of sites related to dance schools/gyms without any permission of the respective owners, ourselves included. We used to have an old site whose homepage texts had already been copied on their site, and they incredibly updated the page on us within days of our new site being indexed. I have two questions regarding this matter: one, could it be that seeing two pages with the exact same text, Google decided to de-index one of the two, mistakenly believing the page plagiarizing the other was ours? And two, am I right to believe that they are infringing our copyrighted text even though the text on our site hasn't been specifically registered for copyright? As in, would the law cover us in asking them to remove ASAP the text they blatantly copied from our homepage without any permission nor request?


Alright, my post is already very long as is. Hopefully someone will have the patience to read it all and maybe even provide some possible explanation or suggestion regarding my inquiries.
