    so for ten thousand years western civilization has been built on wheat and grains.. but they are apperently really horrible for us ..

    maybe there is something we have been doing the last 20-30 years that has made gluten bad for us ..causing all of these problems .

    i mean it is really easy to go low carb .. gutton free or what ever the next diet is ..

    try eating stuff with only ingredient you know how to pronounce ..

    the problem is not with gluten...it is just another protien.. the problem is something else in the modern diet has impaired our ability to break it down .

    if you do not want to give up glutton ..buy a high quality home wheat grinder .. get a sour dough starter going .. and learn to bake your own bread .. make your own crackers ..and hand make pasta .

    also as fresh pinapple to your diet or supplement with bromalain(sp) a digestive enzyme found in pineapple that breaks down protein .

    and using freshly ground organic wheat you get the wheat germ and a lot more nutrient than white flour or the stuff that passes itself of as whole wheat ..

      The wheat that is grown today is significantly different than the wheat from a hundred years ago (and thousands of years ago as well). It's often called "frankenwheat" for very good reason. That's a big part of the problem. Despite all the hype about "healthy whole grains" (which is really an oxymoron), wheat and other grains are not nutritionally dense foods. And they do cause a lot of health issues for many people, and not just those with celiac disease. Gluten intolerance is more widespread than most people realize.

      Corn, also a grain, has limited nutritional value, and probably 90% of it grown today (at least in the U.S.) is genetically modified. We have no idea the long term effects of consuming GMOs; not to mention the impact they have on the environment. Cows don't digest it well; it's not food they were ever intended to eat, yet that's a major part of what most cattle grown for beef and milk are fed. A terrible diet and deplorable conditions are why so many cows get sick and have to be given antibiotics.

      Your post really oversimplifies the issue with modern wheat and other grains.

    Thanks Joe - interesting plus now that I know that my brain is 70% fat, the next time someone calls me a fathead I won't take so much offence. I might even take it as a compliment, meaning "I'm brainy". Cool.
