Great "kitchen challenged" recipes

How about a thread for some simple recipes even the most "kitchen challenged" can use...Must use common ingredients and no fancy "chef" skills.

Kurt's Quick Sweet and Sour Sauce:
Half cup store bought BBQ sauce
Healthy splash of orange juice
A good squeeze of honey

Cheap Tasty Health Food
2 slices whole grain, enriched bread
peanut butter
sliced banana
squeeze of honey

Make a sandwhich using the above - Drink a glass of low fat milk w/sandwhich -

The above includes all the basic nourishment needed. Tastes great and is as healthy as any of the expensive "health foods".

    Healthy - Stick To Your Ribs - Breakfast Of Champions

    1/2 cup Quaker oatmeal (not the sugary packaged crap)
    1 cup water

    Mix in large bowl and microwave for 2 1/2 minutes.

    Sprinkle with almonds or walnuts and bananas or berries of your choice.

    Stir and enjoy!

    How about some UNhealthy stuff...

    Alfredo Sauce:

    2 Cups Heavy Cream
    1/2 Cup Butter
    1/2 Cup Grated Parmesan Cheese
    1 - 2 cloves garlic, minced
    Optional - white pepper

    Melt butter in saucepan. Add heavy cream, garlic and pepper. Watch it carefully. The heavy cream will boil over if you turn your back

    Add the Parmesan cheese. Cook until sauce is smooth and creamy.

    Pour over some fettuccine.

    Nice variation - add grilled chicken and/or broccoli

        Perfect Hard Boiled Eggs

        This uses an automatic electric kettle, the kind that auto shuts off.

        Take the eggs out of the fridge at least an hour in advance.
        Put them (carefully) in the kettle and cover with a couple inches of water.
        Turn on the kettle, when it turns off set a timer for 15 minutes. I use the
        kitchen timer function on my microwave.
        When the timer goes off, drain the hot water, then fill the kettle with cold
        tap water and drain again. I do this six times. Then remove the eggs and
        put them in the fridge.

        They are perfect. The yolks are cooked through but not hard and no
        discolouration around the yolk.

        I use an egg slicer and lay a row of slices across the top of a bowl of
        noodles. Very attractive and yummy.

          Here's a real easy one.

          I package Johnsonville Brats (5) or equivelent.
          1 onion
          5-6 garlic cloves
          1 beer

          Brown the brats in a skillet turning a few times until both sides are good and browned (almost black). Add a dash of oil if you like to speed up the browning.

          Cut the onion into 6ths to 8ths.

          Once the brats are browned, add a 12oz beer to the skillet along with the onion and garlic.

          Turn the heat down to med-low and let it simmer until the liquid is almost gone turning the brats a few times during the cooking.

          Remove brats and serve or reserve.

          If you want to reserve the brats take the rest of the reduction of the beer/onion/garlic (almost a syrup at this point) and add it to a can of cream of mushroom soup and water, and bring to a boil.

          You can cut up one of the brats into small chunks and add it to the soup if you like.

          Then eat.

      Hey Mike,

      I made it for my family last night, and thought it was pretty tasty.

      But for some reason I think I messed it up somewhere. My said the sauce was good, but the fettucine was crunchy!! Perhaps I overlooked a step?

    This is an easy one and impresses company.

    Cajun Shrimp Linguine - serve with rolls and tossed salad

    Boil your linguini pasta at the same time you are making the sauce - that's all the longer this takes.

    In skillet -
    1/2 pint heavy cream or whipping cream (not WHIPPED cream - whipping)
    while it's heating up add:
    2 cloves crushed garlic
    A tablespoon of butter
    And cajun spice to taste (remember if it's a bit strong it's going to be spread out on Linguini pasta. A tad strong is good.
    Wait til cream reduces (sauce thickens a bit)
    Then toss in as many shrimp as you want. I like about 2 pounds, but 1 pound is usual.
    Cook a few minutes until the shrimp are done.

    Pour sauce over linguine and pig out!

    Your guests will think you actually fussed on this one.

      My mother used to make the Hunter Steak all the time.
      She would have the butcher run the steak and bacon slices together through the cubed steak machine

        Great Baked Beans recipe!


        4 large cans pork & beans or any other type you prefer
        2 Lbs. bacon
        1/4 c. mustard
        1 c. brown sugar
        2 lg. onions

        Cut bacon into thirds and fry till 3/4 way done. Drain grease. Combine all ingredients and bake at 350' for 45 min. Add more brown sugar or mustard if needed. Bake for 3 more hours, stir every 1/2 hour.

      I just ate one of those "easy - good" meals tonight.

      Take 2 bone-in chicken breasts and brown them lightly (no flour) in a bit of olive oil. Season with salt, fresh cracked pepper and montreal chicken seasoning (or greek seasoning, or adobo or fresh rosemary or whatever other spice mix you like).

      Pour one can of Campbell's cream of chicken soup with herbs over the chicken, cover and simmer until chicken is tender, 45 minutes to an hour.

      The result is tender chicken with an herb gravy that smells and tastes rich but is pretty healthy. You can use low fat cream of chicken soup if you want - but I don't.

      Easy peasey - one pan - no mess, no fuss - and it's good!

        Kay - I do that one but add rice or potatoes to it. Good eating for sure.

        I also use cream of chicken soup for gravy when I do chick and mashed potatoes and stuffing.

    Here's one from my youth:

    Tortillas 'n eggs. Great anytime of day.

    Corn tortillas
    Eggs

    Use whatever oil or grease pleases you. (My mom
    used bacon drippings a lot. lol. Can't beat it for the
    taste, and I'm still here.)

    Take 3 or 4 tortillas and tear them up into half dollar
    size pieces.

    Put them in the hot oil and move 'em around and flip
    them until they're hot and a little cooked.

    Scramble the eggs, add to skillet.

    I personally love tortillas and eggs with copious amounts
    of Tabasco sauce.

    Damn fine eating.

    Here are three off of my blog.

    So you're a starving Internet marketer? Want to eat like a king on limited budget? This one is just for fun, but I thought I'd post some of my favorite foods in terms of being able to make them on the cheap, but not sacrificing on taste. Here goes.

    My Pay-Per-Click Pizza On A $5 Budget




    Ya know, I just love pizza, but when I buy a twenty dollar pizza and realize there's only a buck or two of ingredients in it, well-the getting cheap thing kicks in for me. I get an Appian Way pizza mix for a bout $1.50. There are two secrets here. First, you've got to juice it up a bit with extras, and second-you need to chop up the ingredients really well to let out the maximum amount of flavor.

    Mix up the pizza dough. You'll need your own Mozzeralla cheese, a small onion, a can of mushroom stems & pieces (they're cheaper than the caps), maybe a red or green pepper, perhaps a few olives. I use a cheap little food chopper to get all of the ingredients chopped up pretty small. I usually add a little left over hamburger as well.





    I add a little extra pizza sauce, the above ingredients, and then the cheese. Forget the 18-20 minutes it says on the box-this pizza cooks a little longer because of all of the goodies on it. You go by sense of smell and how it looks. This is better than 90% of the commercial pizzas and it won't break your budget.

    I started making this when my kids were but wee tikes-they loved it and there's nothing like it on a cold Michigan winter's day. It's so simple it should be illegal.

    Just get two cans of Campbell's vegetable beef soup and empty the contents into a casserole dish. Add just one can of water. Now cut up a largish potato (maybe two) into 3/4 inch cubes. (Pieces shaped like octahedrons, icosahedrons, or odecahedrons will work just about as well-ha ha, just kidding-I used to be a math teacher.)

    Anyway, add the potato pieces to the soup mix (add some onion if you like) and bake for one hour at 350. The last ten minutes add some grated cheddar cheese and let it melt over the surface. Take it out, scoop it up, and you're good to go. It's eating great on the cheap!

    If you have a hard time following instructions this one shouldn't challenge you too much. Add one pound of raw hamburger, one can of condensed tomato soup (no water), and one cup of instant rice to a casserole dish and mix it all together well with your hands-yup, it's gooey, but it's kind of fun! Bake one hour at 350 degrees F. or 623 degrees Kelvin (sorry, I used to be a chemistry teacher).

    Anyway, this stuff is great. Eat is plain, or-try making a sandwich with a little mayo out of it and eating it with a fork. Oh yeah, I can taste it now. Enjoy!

    Heck - as long as this has turned into the cooking with soup thread --

    1 lb ground beef
    1 diced onion - see MM for other interesting shapes (he used to be a math teacher)
    brown beef and drain the fat
    a couple of tablespoons catsup
    1 tablespoon mustard
    1 can of chicken gumbo soup
    1 soup can of water
    simmer until most of the water is gone and onions are tender - the consistency should be that of sloppy joes, which..um...is what you are making.

    Stick the stuff on a bun and eat it - over a plate - there's a reason they are called "sloppy".
