I would like to wish everyone a Happy and Safe Thanksgiving! It is a great time to share with Family and Friends and give thanks Don't forget the Turkey .

    I have all my 'boys' together for the first time in about 5 years - going to be a great weekend.



    We're missing my granddaughter - but her fiance graduated from the Police Academy in Colorado last week so this is his first week 'on the job'.



    We've been to the airport 3 days in a row for pickups but no one is complaining about the drive....relatives from minnesota, grandsons from Nevada and Colorado -, son and grandson from Georgia are driving and are halfway here.


    I had planned a quick trip to the horse farm this morning to get away and decompress - but 30-50 mph winds today changed that plan Oh well, "Cuban pork' in the crockpot for tonight....enough food to feed an army tomorrow (fried turkey, bacon wrapped smoked turkey breast and honey baked ham)....I think my d-in-law and I got carried away with the grocery shopping. Oh well - leftovers!

    No recipe - it's one of my 'toss it together' thingies.


    Today - boneless pork loin cut in three pieces to fit in the crockpot
    3 limes sliced thin
    small jar of whole pepperoncini
    coarse pepper, about 2 tablespoons of McCormick Italian seasoning


    Put pork in crockpot - add black pepper, a little salt, some of the italian seasoning.....cover the surfaces of the meat with lime slices, add the pepperoncini around the sides and add rest of italian seasoning over all....then pour on a full can of beer....cook it for 7-9 hrs ....


    ...then totally pig out with sub buns and sliced cheese if you like.


    Good stuff - and the house smells fantastic.

    Yes, you shred it - we use 'bear claws' to shred it - but forks work, too.


    Serve the liquid from the pot on the side - provolone, swiss, etc...good stuff!
