I am staring at a mountain of left over turkey with no idea of what to do with it all...beside having thanksgiving all over again...maybe a third time too...or turkey sandwiches for 2 weeks+...

Any suggstions on left over turkey recipes that will light up the taste buds?

    Okay -

    Make a multi-grain bread,
Roll it out into a long rectangle.
    Sprinkle with chunks of turkey.
    Roll up into long tube
Cut tube into two inch long sections
put into pan and let rise (they will look like Cinnamon rolls)
    Bake
Then top with Turkey gravy. Serve with veggies and salad.
Works with chicken, too - or beef - or pork.

    According to the FDA:

    • Discard any turkey, stuffing, and gravy left out at room temperature longer than 2 hours; 1 hour in temperatures above 90 °F.
    • Divide leftovers into smaller portions. Refrigerate or freeze in covered shallow containers for quicker cooling.
    • Use refrigerated turkey and stuffing within 3 to 4 days. Use gravy within 1 to 2 days.
    • If freezing leftovers, use within 2 to 6 months for best quality.

Get some nice large burritos shells, throw some turkey on it, top with a few scoops of gravy and a handful of cheese.

Microwave til cheese melts, roll up and devour.

    Yum!

    turkey
    miracle whip/mayo
    cranberry sauce
    lettuce
    fresh bread

That right there to me is the best thing about Thanksgiving -

I'm with you there Pat...except for the cranberry sauce.

      Nope, not on my sandwich.

My friend just made me Turkey Empanadas- turkey, black beans and cheese wrapped in a pastry shell. I also like the Thanksgiving wrap which is turkey, stuffing, cranberry sauce in a whole wheat wrap. Of course, there's always the old standby of Turkey Pot Pie. Yum!
