Well, I THINK XLS is now a standard, but you should be aware that some things may not work on a particular version, even in EXCEL! And I think most can use doc at this point also, same caveats apply. HECK, excel has an XML format, and I tried using formulas in it and didn't get them to work.

I guess the REAL question is what kind of templates do you want to create? BTW Apple is STILL a small part of the market, and MOST of its users will have problems getting into technical details. And this IS primarily a marketers forum, and most of those are in the main forum. So you are asking a subset(technical users) of a subset(apple users) of a subset(marketers) of a subset(people on in the past 8 hours) of a subset(this forum) a question like this. HECK, give it some time at least.

I want to do this! What's This?
The Apple iWorks spreadsheet application, Numbers, opens Microsoft Excel files (.xls) directly through the open application, using a drag-and-drop method for automatically converting the file or by importing the data. According to Apple, iWorks '09 has enhanced compatibility with Microsoft Office. Numbers opens Excel workbooks and spreadsheets and saves objects, embedded tables and charts as separate worksheets. Gain control over the organization of the worksheets by moving embedded objects to a separate spreadsheet before sending the file to a Mac user.

I want to do this! What's This?
With the release of Microsoft Excel 2007 and Microsoft Excel for Mac 2008, Microsoft replaced the default file extension, .xls, with a new file extension, .xlsx. The .xlsx file format allows for greater flexibility and functionality in a spreadsheet document. Unlike .xls, users can format each cell in the document individually. The .xlsx format uses the Open XML standard, which compresses individual files within a document as a zip archive.
    Difficulty: Easy
    Instructions
    1
Open an .xls document you want to convert to .xlsx in Excel 2008.

    2
Go to the "File" menu and select "Save As."

    3
Type a name for the converted file next to "Save As." Select a save location for the converted spreadsheet file.

    4
Set the "Format" pull down menu to "Excel Workbook (.xlsx)." Press "Save."

It LOOKS like the apple app is called apple numbers

From the horses(scratch that, bakers 8-)) mouth

Apple - iWork - Numbers - Create perfect spreadsheets in minutes.

Apple - Pro - Tips - Editing Word Files ? Without Word

BTW apple claims BOTH now work BOTH ways!

BTW HERE is a review of numbers. Apparently it is only about 3 years old:
